Fan sent in a recipe that is so easy and delicious, but they forgot to add their name to the list! (Please get back to us on that)
Take two Chicken breast, rinse and pat dry. With a basting brush, cover the chicken with either butter or extra virgin olive oil. Now season with Auntie Arwen's Dreamin' Florida Orange pepper.
Place in a baking dutch oven, 1 cup of rice, 2 cups of low sodium chicken broth. Add 4 carrots cut, peeled, and sliced diagonally. Stir well and place in a 425 degree preheated oven on the center rack. Bake for about 20 minutes.
After 20 minutes, take the dutch oven out and stir the contents. Now place the chicken on top of the almost cooked rice and carrots. Cover and place back into the oven for another 20-25 minutes.
In the mean time, take a cup of orange juice and 1/4 cup of Honey and a tsp of arrow root or cornstarch, mix in a sauce pan stirring till it starts to bubble. Remove from heat and stir till thick.
When the center of the meatiest part of the chicken reaches 170 degrees in the center, and the rice has no water left in it, and is well cooked, Dinner is ready!
Serve with the rice and carrots as the bed on a plate, with the chicken on top and a spoonful of Orange glace over it, with a salad on the side... (sigh) it's dinner for friends, companions, and heroes of the day..
