Ingredients: Kosher salt, black pepper, onion, garlic, mild New Mexico red chili pepper, thyme, fennel seed, paprika, rosemary.
One of our favorites, this blend has a nice bold flavor, excellent nose and very satisfying mouth. With the mild New Mexico chili pepper as the warmth, Garlic and onion as a base with Kosher salt and good black pepper, but it's the thyme and fennel seed, paprika and rosemary that make the flavor sing. It makes an excellent rub for meats, and a great seasoning base for sauces. Try topping your own homemade breads with this savory blend! Puts the "Everything" bagel to shame!
Our favorite grilled steak recipe is so simple, and fast!
On a 1-1 1/2 pound steak, allow it to come to room temp. Score the meat on both sides in cross cuts about 1/4" to 1/3" deep. Pat dry, then rub both sides with about a tablespoon each side and let rest 1/2 hour before grilling.
Grill on a medium flame or broil about 2 minutes on each side, 3 min for medium-rare..
For rare, the interior temp should be 125 degrees, for Medium rare 130 degrees, and for medium, 135 degrees...
let sit for 5 minutes and then cut into slices... serve!
