Maharajah's pepper curry is a unique recipe of spices that caters to the pepper lovers out there. It has the lovely bite of black pepper that is traditional of the crusader's influence of hot curries.
As a bit of history, this type of blend was mostly used during the crusader's time period and brought back to many of the missions or monasteries that skirted the routes along the pilgrim's roads. The Merchants, Pilgrims, and many travelers used to stop at these monasteries to rest for a few days before proceeding either to or from religious sites. Many spice merchants used to pay their way with spices and the Monks used them in recipes to feed privileged visitors, thus the over use of pepper!
Now this recipe is not researched as "a period" recipe but it's blend is very much like the blends of the time period.
It's flavor is strong, clean and savory! It defiantly has a bite and a complexity that is rich and diverse.
A tablespoon into your favorite curry recipes would make a welcome change from your usual ho-hum curry. But be warned, it bites back!
