Ingredients : Mild NM chili, turmeric, Korinjte cinnamon, coriander, cumin, cardamom, black pepper, ginger, nutmeg, clove, 15K HU cayenne, saffron.
Kabsa chicken is practically the traditional Middle East flavor of most dinners in the country. The flavors are rich, satisfying, easy to make and steeped in culture! Arabian Nights Kabsa blend is the favorite Middle east flavors in our house and tasty..
I like to make this Kabsa chicken recipe because it's easy and Oh so delicious!
I start with butter in a large pan with one large chopped onion and a few finely chopped bell peppers. Toast till just golden.
Add a small can of tomato paste, 1-2 tablespoons of Auntie Arwen's Arabian Nights Kabsa blend, 2-3 pounds of chicken quarters/thighs/breast meat and 3 chopped tomatoes (in medium to large pieces) and 3 medium chopped carrots and 1cup of chicken broth. Stir to mix the sauce well and Brown the chicken and cook for 30 min on a medium heat.
Once chicken is browned, remove from the pan and add 3 cups of long grain or basmatti rice. Add 3 cups of water or chicken broth, cover and simmer for about 15-20 minutes. You can add about 1/3 cups of dried fruit or raisins at the beginning of the rice sequence if you wish... it's optional.
I either grill the chicken or broil it till well warmed and serve with the rice! I like to sprinkle a touch of toasted sesame seeds or pistachio nuts on top for texture... Excellent for many different occasions!
