French Style Vadouvan curry masala is one of my personal favorites. My mother is french by birth and her cooking is incredible, but then again many of you will say I am biased. You are right.
Vadouvan is a style of curry that was influenced by the influx of french immigrants during the early colonial period in the Puducherry region (south eastern corner of India). It's aromatic flavors, which include onion, shallots and mustard, is purely of the french cuisine that is so unique to that area! The savory flavors of the combination of both Indian and French is what makes this blend complex and satisfying. It's not hot, not sweet, and not overwhelming. It's just right!
I love making a very quick sauce with this as the spice that, when served over chicken and rice and broccoli, makes magic!
It makes the meal disappear!
Try it as a sprinkle over popcorn,... or as a addition to your mashed potatoes, just a touch now! But always a favorite in any of your cooking pleasure!
