Quick and easy grilled fish is perfect for camping and company alike!
Make sure the catcher has descaled and cleaned the fish first! that's what the rule is in our house!
On a sheet of aluminum foil about 3 times the size of the portion of fish you are about to serve, either oil or butter the center surface. Place either onion slices or slices of lemon to make a bed for the fish. Place the fish on and sprinkle enough of Auntie Arwen's Down East fish herbs to cover lightly.
Add 1/4 cup chopped onion, 1/4 cup of finely chopped potato and carrots on top.
Place a sprig of either dill or parsley on top. Fold up the sides of the aluminum to make a "boat" around the fish and add about 1/8 cup of water or lemon juice into the "boat". Seal leaving a little hole at top and place on the grill/fire/coals/pan. Cook for about 15 - 20 minutes or till there is no steam coming out..
The meat of the fish should be white and flaky and flavorful!
Serve with home made tartar sauce or hollandaise sauce and baked potatoes and salad.
Perfect for those hunting camp outs!
