Ingredients : Black pepper, onion, garlic, cumin, coriander, oregano, parsley, lime juice powder, 40k HU cayenne.
Coyote Call Fajita is wonderful for either a marinade or a quick saute seasoning for your Fajita ingredients.
The foundation of black pepper, onion, garlic, cumin gives the coriander and lime juice a major lift but it's the background heat of the 40k cayenne that makes all the difference. It's a mild blend but not afraid to make your meal a hit!
Try it on your shrimp or beef or chicken strips for the fixings or saute your pepper and onions in a teaspoon of this to give that extra special bite for your meal tonight. It's been proven as a chicken or fish marinade for tacos as well!
Simple way to use it is prepare your fajitas fixins ahead of time. Slice one medium red onion into slivers, same with peppers, (one each of two colors), 2 small Jalapeños, and a choice of meat, chicken, shrimp, beef, or pork.. (about 1/4 pound per person is a good guess.)
Take the meat of choice and dredge it in 1/8 cup of Auntie Arwen's Coyote call Fajita blend till well coated evenly.
Let sit while the rice is cooking. (I usually add about 1/4 cup of Auntie Arwen's Clumsy Caballero mexican blend to the water when I make my fajita rice. I use a rice cooker but I always remember the 2 cups of water to each cup of rice.)
I make a pot of beans (brown, black, red or kidney beans) to go with the dish because of vegetarian and diets love beans!
When the rice is done, is when I start my grilling of the fixins.
In a hot pan with a touch of oil, quick saute each ingredient separately leaving the meat for last. Each ingredient should be in it's own bowl for allergy and individual tastes... (I make sauteed mushrooms separately because I am the only one who loves mushrooms)
For the tortillas, you can always warm them in the oven on medium or do a quick steam in the microwave if you choose.
Serve with sour cream, hot or mild salsa, home made guacamole and lots of napkins!
