Ingredients : 90K HU cayenne, garlic, onion, cumin, coriander, ginger, Korinjte cinnamon, brown mustard, black pepper, cloves, 60K HU cayenne, jalapeño chili pepper, 90k cayenne, brown sugar, cardamom, turmeric, fenugreek, sea salt.
Thermonuclear Goan Style Vindaloo is another way of saying "My face is coming off" HOT! If the 90k HU Cayenne doesn't get you, the 60k, or the Jalapeño chili pepper does. It's not sneaky in any way possible. It's blunt force trauma in a jar!
It's complexity will tempt you in and the fragrance while cooking is enticing! It has heat, it has sweetness, it has savory and nose!
Goan Style is a type of Indian cooking very much influenced by the Portuguese in a tiny but rich Indian provence known as Goa (google it). It's complex flavors were but together for many diverse palates but every "grandmother" still insists that Heat is the way to a man's heart. I'm told it's not the hottest dish they make but I won't try anything hotter, I'm a verified heat wimp!
Many Indian restaurants usually make this dish with pork as it's meat base but I have seen it done with chicken and just potatoes and apples.
I don't have a recipe for Vindaloo but I understand that vinegar and garlic is involved... the dinner is much like a spicy pickle with pork.
