Raja's Banquet Savory Biryani Masala is just the perfect blend to make Indian vegetable rice, or Chicken Biryani or even just a pinch in potato salad or pasta salad.
It's a blend of exotic flavors that bring the flavors out in the food while the cooking makes the Spices pop!
Want to try something simple but, oh so different?
A favorite rice recipe here is with Basmati rice, carrots, peas, cauliflower, potatoes, onions and even tomatoes. Excellent as an accompaniment for any chicken dish or even on it's own!
Get your favorite vegetables ready and let's get started!
In a 5 quart pot, or dutch oven (which ever you wish) Start sauteing chopped onion in butter or Ghee, till just transparent'
Stir in a half to 3/4 cup of water, a finely minced clove of fresh garlic, and 2 well chopped roma tomatoes. (I prefer Roma because of the meatiness of the tomato and less seeds). Sometimes I have to omit the tomato because my other half is allergic. At this point, if you like Ginger, you can add a peeled and finely chopped ginger root for bite!
Cook till the water is just about gone. Add your 2 finely chopped celery stalks, 2 peeled and coined carrots, handful of snap peas, cup and 1/2 of chunked cauliflower, Green, red and orange bell peppers, white potatoes, all being about 1" chunks. Stir till combined.
Now add about 1-2 tablespoons of Auntie Arwen's Raja's Banquet Savory Biryani masala blend (to taste, start with 1, and add if you like the flavor to be more intense, remember, Yogurt is your friend). Stir till just well coated.
Add 4 cups Vegetable broth (or chicken if you like). Stir and cook till softly boiling.
While that is warming, rinse about 2 cups of Basmati Rice till the water runs clear. That gets rid of the excess starch and starts the "cooking" process.
Once the broth and vegetables are just starting to soft boil, add the rice, stir till well combined, and cover. On a medium heat, let cook for about 15-20 minutes.
Turn off the heat and let stand for about another 5 minutes.
Serve with Naan Bread, Yogurt (for those who need to soften the spicy) and maybe even fresh cucumbers on the side.
