Ingredients : Turmeric, ginger, 15k cayenne, Dundee chili, cloves, processor's choice chili, coriander, cumin, whole green cardamom pods, garlic, cassia cinnamon, habanero chili, sea salt, onion.
North Indian Rogan Josh lamb curry blend is the perfect blend of spices that compliment specific meat flavors such as lamb, mutton, pork and even goat... yea, I said goat! there are specific spices that work together well with certain meats and this is such a blend! Strong flavored meats need coriander, cinnamon, cloves, garlic and some salt. It's the rest of the blend that makes it a curry!
Rogan Josh curry is easy to make as long as you have the right meats and a crock pot or Dutch oven.
You line the bottom of the pan with onion slices. Arrange the meat over the bed of onion, leaving room for some vegetables like baby carrots, and/or cubed potato, or other root vegetables. Combine in a sauce pan, two tablespoons of Rogan Josh Curry blend, 2 cups of broth (vegetable or chicken), and a small can of crushed tomatoes. Heat till just shy of boiling then add about a 1/2 cup of water and cornstarch well blended. Stir the sauce till just thick, remove from the heat and add about 1/2 to 2/3 cup of sour cream or heavy cream. Pour the mix over the meat in the crock pot or Dutch oven and add either more onion or mushrooms or tart dried fruit, like apricots onto the top of it. Cover and cook for 4 + hours, (Dutch oven, bake at 300 degrees for 2-3 hours.)
That is the typical North Indian Rogan Josh curry recipe...but I've had it as a light meat rub on goat Kabobs! Wow!
