Ingredients: Sea salt, paprika, onion, garlic, basil, thyme, black pepper, oregano, white pepper, ancho chili pepper.

There is a Restaurant in the south that I always stop at for their fried catfish. I cannot come even close to their recipe but this is my attempt at giving homage to their talent.
My recipe includes fine ground bread crumbs, a tablespoon of this spice blend mixed in and several fillets of washed and cleaned catfish. (it's a rare commodity here in the north). Dip the semi damp catfish in a plate of the seasoned bread crumbs, making sure it's well coated, and fry in a medium high heat pan of peanut oil. Fry till golden and serve with cole slaw and corn bread. (sigh).
If you can't find catfish, you can use any freshwater fish, or haddock fillets.
and don't forget the cole slaw!!! Or Corn bread!!
