Ingredients: Orange Peel, rosemary, garlic, Kosher salt, lemon peel, and a pinch of citric acid.
Auntie Arwen's Loose Moose mix is a blend that is an eye opener for those that love rosemary flavor. The orange and lemon peel give a surprising accent to the strong deep flavor of the Rosemary along with the salt and garlic.
We found that you can either just add it to a crock pot with a pork roast and potatoes, or grind it in a salt/pepper grinder as a seasoning on chicken and broccoli oven dish.
To make the Crock pot dish, you can use either chicken or stew beef, (for a serving of 4, use 2 lbs of meat). Add about 1 onion, 3 carrots, 3 medium potatoes, 2 turnips, and or parsnips, all chopped into 1" pieces.
Into 3 cups of broth or hot water (for beef, use beef broth, for chicken, use chicken broth..) add 2-3 tablespoons of Auntie Arwen's Loose Moose blend and mix till salt is dissolved. Pour into the crock pot and add hot water if needed to cover. Stir till well mixed and cook on high for about 5 hours or until meat is tender and just starting to fall apart.
For baked chicken, Preheat oven for 350 degrees. For 4 servings, take 4 chicken breast, rinse and pat dry. Either in a mortar and pestle, or in a pepper grinder, grind up about 1 table spoon of Auntie Arwen's Loose Moose blend and sprinkle on the chicken, turn over and season other side as well. In a 9"x12" pan, arrange the chicken loosely apart. You can add root vegetables or broccoli around the chicken. Drizzle olive or vegetable oil on all and stir till well covered. Sprinkle a touch more Auntie Arwen's Loose Moose on and place in oven for about 25-30 minutes or until chicken is 165 degrees in the center of the breast.
Serve with salad and/or long grain rice. Nomnomnom...
