Ingredients: Brown mustard seeds, ginger, garlic, sweet paprika, fennel seeds, mild NM chili, onion, thyme, allspice, clove, black pepper, cassia cinnamon, 40k HU cayenne.

Jolly Roger Jerk seasoning makes a great marinade for those who need just the right bite for their Jerk chicken or beef.
Sweet and hot are the best way to describe the tastes you get with this blend.
Easy enough to do, for those who love jerk chicken or look to do something different to spice up your recipe collection, try this easy recipe....Remember, it takes at least 12 hours to marinate! it's best to do this overnight.
Take about a pound of chicken thighs, legs or drumsticks, (breast meat comes out too dry with this recipe) and place them in a very large non porous bowl.
In a small saucepan, combine 1 cup olive oil, 1/2 cup tarragon vinegar or malt vinegar, 1/4 cup brown sugar, and about 2 tablespoons (to taste) of Auntie Arwen's Jolly Roger Jerk seasoning. Combine well and warm till sugar has melted. Let it cool till room temp, then pour in to the bowl with the chicken... you may have to add water if it's not enough to cover the chicken. Cover with saran wrap or aluminum foil to seal well. Place in the fridge and let marinate for at least 12 hours.
You can then either grill (remember to really oil the grate), grill turning often, but make sure the inner temp is at least 165 degrees...
or bake in an 400 oven, turning often for 35 minutes. If you really like the outer skin crispy, for the last 5 minutes, low broil, again turning often!
I like to sprinkle with lime juice and garnish with scallions and serve with cole slaw and pineapple salsa..
