Nutria, better known as Marsh Dogs or Swamp rats, are an invasive species that have invaded and is in the process of destroying thousands of acres of Louisiana marshland. Yes, they have been deemed edible and I've been told, "they taste like chicken"...
I am not that brave.
On that note, I use this blend on my chicken, Fish and even pork. It's savory garlic and paprika, along with the sweetness of the onion, is a perfect backdrop for the black pepper and 40k Cayenne that makes this blend simple but perfect for those baked chicken dishes, the slow roasted pork chops and vegetables, and even my favorite fish casseroles.
When I do my Fish casseroles, it's very simple. For every serving, take one flounder/haddock/or fish of your choice. If fresh, de-bone and cut up into 1 inch size pieces. If frozen, thaw, then just cut into the same.
In a bowl, mix the fish with 1/2 cup (for each serving) cracker or crouton crumbs.
Add 1 teaspoon of "Got Nutria" (or more to taste), 2 TBSP melted butter or olive oil, finely chopped celery or dill weed, and 1/4 cup of finely chopped cabbage. Mix till coated. Spoon into single serving bake dishes. Slip them into a preheated 350 degree oven, bake for about 20 minutes or until the flesh is white and the crumbs are toasty brown.
Serve with tartar sauce or melted butter and a salad on the side.
