Description:This is an extremely limited supply artisan salt, which contains 15% - 20% natural minerals (besides sodium chloride). Only one small company in the world, located on Aguni Island near Okinawa, makes it Sea water from the clear water which surrounds the island is pumped up into a 10-meter tall tower in which bamboo trees/shrubs are hung, tips-down. The water is gently sprayed onto the bamboo, and trickles down the leaves and stalks, after which it is recirculated back to the top of the tower to make another trip down the bamboo. The sides of the tower are open to the air, which helps evaporate water out of the salt. It takes a week to concentrate one batch of seawater into a concentrated bamboo-flavored saline. Now, the brine is put into a flat pan (hiragama) and slowly boiled down over a wood fire for two days, and then the nigari (crystalline salt) is extracted over the next 4-5 days. Finally, the salt crystals are put through a sieve for two days for maturation. This is not a mass-produced product. There are only a few Master salt craftsmen who make it. This is one heckuva salt, you betcha!
