Description:Mexican oregano is what you use for the best chilis going!
Recipe:And here's Auntie Arwen's Texas-style chili recipe (serves 6-8):
Saute in ca. 1/4 c. bacon fat until golden: 1 large chopped onion and 3 chopped garlic cloves. Then add 2 lbs hamburger (chuck) and stir around, breaking up the beef so that it can brown nicely.
When it is mostly grey, add 2 c. water and cover. Simmer for 1 hour; add water during the cooking if necessary.
Then, add 6 tbsp of our Old Sombrero Chili Blend, 2 tsp mild New Mexico red chili pepper (ground or crushed), 1 tsp chipotle chili pepper (ground), 2 tsp Mexican oregano, 2 tsp cumin (seed or ground), and 1 tbsp salt.
Stir until blended; simmer covered another hour, adding water if necessary.
At this point, I toss in 1 tsp of our epazote, since I will be eating beans with my chili. For chili con carne, add the cooked beans along with the epazote. Simmer another half hour, and then serve with fresh-out-of-the-oven cornbread, a tossed salad, and a glass of chilled beer.
