Recipe:For a super rice pilaf with a delicious nutty flavor, put oil in pan; when hot, toss in ½ tsp brown mustard seed; cover the pan. They'll pop sorta like popcorn. When the popping rate starts declining, quickly toss in one medium chopped onion and one chopped garlic clove. Saute briefly and then add 1 cup rice. Stir-fry until most of the rice grains turn white, then add 2 to 2 ½ c. boiling water...or better yet, boiling chicken broth.
In Kerala, India, one would add foenugreek seed (say about 1 tsp), toor dal and urud dal (say, ½ c @) with the rice, and then add a generous pinch of neem leaves along with the water or broth.
Remember: 1 part rice/dal and 2 parts liquid. Cook on low until liquid is absorbed and grains are tender.
